Vegetarian Vegan

A classic recipe, updated for vegan tastes -- if it's not in your recipe files or on your table yet, it's time to fix that, using delicious Locally Grown vegetables!

Ingredients

  • 1/2 cup traditional mayonnaise or Veganaise
  • 2 T. sugar
  • 2 T. cider vinegar
  • 3/4 tsp. salt
  • 1/4 tsp. dry mustard
  • 1/8 tsp. celery seeds
  • 4 cups coarsely shredded cabbage
  • 3/4 cup coarsely shredded carrots
  • 1/2 cup diced green pepper
  • 2 T. sliced green onions

Instructions

    In a medium bowl, stir together the first 6 ingredients.

    Add remaining ingredients, and toss to coat well.

    Cover and chill for at least two hours so flavors can mix well.
