Country-Style Cole Slaw
A classic recipe, updated for vegan tastes -- if it's not in your recipe files or on your table yet, it's time to fix that, using delicious Locally Grown vegetables!
Ingredients
- 1/2 cup traditional mayonnaise or Veganaise
- 2 T. sugar
- 2 T. cider vinegar
- 3/4 tsp. salt
- 1/4 tsp. dry mustard
- 1/8 tsp. celery seeds
- 4 cups coarsely shredded cabbage
- 3/4 cup coarsely shredded carrots
- 1/2 cup diced green pepper
- 2 T. sliced green onions
Instructions
- 1In a medium bowl, stir together the first 6 ingredients.
- 2Add remaining ingredients, and toss to coat well.
- 3Cover and chill for at least two hours so flavors can mix well.
