Finnish Cucumber Salad
This tasty dish is always a favorite at the meetings of the Jackson (Michigan) Scandinavian-American Society.
Ingredients
- 1 cup sour cream or plain yogurt
- 2 T. fresh dill (or 1 T. dried dillweed)
- 1 T. sugar
- 2 T. white vinegar
- 2 T. mild oil, such as canola
- 1/2 tsp. salt
- 1/8 tsp. black pepper
- 4 cups peeled, thinly sliced cucumbers
Instructions
- 1Mix all the dressing ingredients together, and gently fold in the cucumbers. Chill at least 3 hours to develop the flavors before serving the salad.
