Roasted Beets with Feta

Ingredients
4
beets
1/4 cup
minced shallot
2 TBS
minced parsley
2 TBS
extra virgin olive oil
1 TBS
balsamic vinegar
1/4 cup
crumbled feta cheese
1 TBS
red wine vinegar
salt and pepper to taste
Step by Step Instructions
- preheat oven to 400 degrees. Wrap each beet in foil and place on baking sheet
- bake beets in preheated oven until easily pierced with a fork; 45 minutes to one hour. Once done, let cool until you handle them and then peel and quarter beets
- while beets are roasting, whisk together shallot, parsley, olive oil, and vinegars in a bowl until blended; season with salt and pepper and set aside
- to assemble the dish, place the warm, sliced beets onto a serving dish, pour vinaigrette over the beets and sprinkle with feta cheese efore serving
