<p>David and Shalley Carrell, Monroe, GA. We both grew up raising livestock (David Limousine cattle, horses, and pigs; Shalley dairy cows, chickens, horses, and pigs.) We both were active in youth organizations such as <span class="caps">FFA</span> and 4H and studied agricultural economics in college in the late 80s. Intuitively disenchanted with modern conventional agriculture, we spent many years afterward &#8220;uneducating ourselves.&#8221; David has always been an avid grass farmer, practicing farming methods based on sustainable, organic principles. David began conserving endangered species of parrots in 1985 and was the first alpaca breeder in the southeast in 1992. He also raised and trained polo horses for many years. He added water buffalo to his farming operation in 2000. Carrell Farms began processing water buffalo under <span class="caps">USDA</span> inspection in December 2011.</p>
