Our young roosters are slow-grown (16-20 weeks) and pasture-raised in small batches, like the good days. They enjoy a diet of organic feed, fresh grass and a cocktail of insects and water from our well. They are grown on our small farm in Oglethorpe County and are processed at a USDA inspected facility. Meaty and strong in flavor, they are perfect for BBQ, soups and stews.

Named for our hero Aldo Leopold, a revered ecologist and author, this is a coffee we roast dark, closer to second crack than our other offerings. Roasted for our loyal supporters who are nostalgic for taste notes reminiscent of the Old World: full-bodied, savory, peppery, and seasoned. The Aldo's is currently a blend of two of our seasonal single origins - an organically grown Mexican coffee from the Chiapas region and a Grade 1 Mandheling from Indonesia. If you like full-bodied coffee, this is the choice for you.

Named for our hero, bell hooks, a writer who only writes in lower case letters, this medium roast blend varies seasonally but is a mainstay on our menu. The bell’s blend is currently a marriage of a grade 1 Yirgacheffe from the Kochere producer group and the Fazenda Ambiental Fortaleza from Brazil. These two combined roasts often elicit taste notes of freshly spread peanut butter and satisfying sweet chocolate. The bell's is our new school blend for the coffee aficionado.

Decaf Monk comes from Fazenda Ambiental Fortaleza in Mococa, Brazil. The coffee is decaffinated through Swiss Water Processing, a natural alternative to other chemical based processes. Artisan and hand-crafted, this year round offering is currently composed of the Finca Zacaleu in Huehuetenango, Guatemala and a grade 1 naturally processed Yirgacheffe called Konga Sedie.
