Collards, like kale, are types of non-heading cabbage and are among the earliest forms of cultivated cabbage. Collards typically are more heat tolerant than cabbage and are usually winter-hardy from Virginia southward. To harvest collards: Remove individual outer leaves before they are 12 inches long. Older leaves can be tough and stringy. Ensure that the inner rosette of leaves remain intact for continuous harvest. Leaf flavor is enhanced by a mild freeze. Collards are exceptionally high in iron and Vitamins A and C.

Fordhook Giant, introduced in 1924, is known for its large crinkled leaves that can reach two feet in length. Stalks (leaf petioles) start out green then mature to a lovely ivory color. During cool weather, Swiss Chard leaves are their tastiest. In general, Swiss Chard tolerates frost and freezes into the upper twenties. Even if a freeze kills the outer leaves, the inner leaves may be quite fine. Cut away any frost damaged leaves and let inner leaves unfold.
