A strange-sounding recipe that is really very good. The savory dressing with mustard and dill highlights the sweetness of perfectly ripe strawberries.

Ingredients

  • 1 T. champagne vinegar or white wine vinegar
  • 2 tsp. snipped fresh chives
  • 2 tsp. Dijon-style mustard
  • to taste salt (about 1/4 tsp.) and pepper (about 1/8 tsp.)
  • 1/4 tsp. snipped fresh dill
  • 3 T. olive oil
  • 1 lb. fresh strawberries
  • 2 bunches green onions, thinly sliced

Instructions

    In a small bowl, combine vinegar, chives, mustard, salt, dill, and pepper. Whisk in the olive oil to form an emulsion.

    Hull the strawberries and slice them 1/4 inch thick.

    In a medium bowl, combine strawberries and onions. Toss with dressing. Serve immediately.
