Poofy Top Cobbler

This easy recipe is both delicious and adaptable. Peaches are an obvious choice for the fruit part, but it also works with berries of many kinds. You assemble it in layers without stirring, and the batter poofs up to make a golden brown topping.

Ingredients
1/4 cup butter or soy margarine
1 cup unbleached white or whole wheat flour
3/4 cup sugar
1 pinch salt
1 T. baking powder
2/3 cup milk or soy milk
about 5 cups fresh peaches, peeled and sliced
about 2 T. grated lemon peel
1/4 tsp. cinnamon
1/4 tsp. ground cloves

Step by Step Instructions
  1. Preheat oven to 350 degrees F. Choose an oblong casserole dish or something similar to hold the cobbler. Melt the margarine or butter and pour it into this dish.
  2. In a bowl, mix the dry ingredients together, and add the milk or soymilk. Stir it up really well. Then pour it into the casserole dish on top of the margarine, but don't stir it there!
  3. Add the sliced peaches and any juice that has rendered out of them. Again, don't stir! Grate the lemon peel over the top of the fruit, and sprinkle the cinnamon and cloves on top of that.
  4. Bake for 40 minutes, or until the top is golden brown. Let cool slightly, then serve, inverting spoonfuls into individual bowls.
