This compact, curly, dark blue-green kale is great harvested as baby- or full-size leaves. The reputable High Mowing Organic Seeds notes that Vates is a favorite of Pete Johnson’s Pete's Greens in Vermont, for late season salad mixes or overwintering. Vates has good resistance to yellowing in cold and in heat, and is popular for steaming and in salads. To harvest kale: Remove individual outer leaves before they are 8 - 10 inches long. Older leaves can be tough and stringy. Ensure that the inner rosette of leaves remain intact for continuous harvest. Kale is rich in vitamins A, C, and K, as well as in calcium, iron, and magnesium. Along with Broccoli and other Brassicas, Kale, contains sulforaphane (particularly when chopped or minced), a chemical believed to have potent anti-cancer properties.
