Mint Jelly . . . Perfect for your spring meats! Delicious on lamb & goose, it takes about 3 cups of leaves to make a good mint infusion for jelly, so I'll gather you enough mint to do just that. If you're like me and you like a stronger taste, forget adding apples or using applemint and go with the straight spearmint flavor. Fantastic on lamb & goose, mint jelly is also great on fish or as mint tea, candy, tabouli salad, and other foods. The people of Morocco buy mint by the large bundle to use as flavoring in everything. When I visited the open-air markets back in the villages, I couldn't believe the volumn of mint that was sold. That's my kind of cooking! In addition to cooking, spearmint is thought to have healing properties (alleviating nausea and headache), and it can even control skin blemishes (soak some fresh crushed leaves a small amount of witch hazel or rubbing alcohol and apply with a cotton ball). Spearmint has been used since ancient times for anti-inflammatory properties, and to alleviate embarrassing gas. It is easy to make sun tea from fresh leaves. Crush leaves into a quart or larger jar of water, cover. Leave in hot sun for 5-6 hours and there you have it!

In Asia, these slightly peppery leaves are often used interchangeably with peppermint or true cilantro (Coriandrum sativum), but to us, it doesn't taste like either, but has a fresh taste all its own. Favorite ways to use Rau Ram are to float a few leaves on top of a clear soup, tuck them into a sandwich, or top a salad with them. See the LG website recipes, too. Because it is basically a subtropical herb, Rau Ram keeps best in a small vase of water on the countertop (rather than in the refrigerator). Sometimes it will even root this way,and you can plant some in your own garden!

Lemon grass is cold sensitive and must be brought inside for the winter. Can be planted outside in spring to grow into a large beautiful clump throughout the summer.
