View RecipesBarnyard eggs all 2 - 2.5 oounces each. Hens have a very large henhouse (where they lay their eggs) to protect them from the weather, but they prefer to roost in the peach tree. To keep them out of mischief in the garden, they have a run twice as long as their henhouse & half as long as the garden (larger area than my house!). Scratch feed, saved corn & grains from the summer, are always available (as is well water) & they have a multitude of "misplaced wildflowers" to peck through (they get their hard shells from the high calcium garden greens). This is a mixed flock. Currently the Rhode Island Red (light brown), Americana (blue/green) & Black Marans (dark brown) are claiming the nest boxes with the lesser breeds waiting for space.

island Red hens. Our hens forage for grass, seeds and insects out of our pasture. We rotate our hens to a different section of pasture (and wooded area) every 3 days - giving them a huge variety in their diet. We also give them vegetable scraps and supplement their diet with an all natural layer feed (NEVER any medication or antibiotics) and cracked corn/scratch grains - for a little fun snack. At night, they roost in their large (10' X 16') chicken coop, which we lock up to keep out predators. Our chickens are NEVER caged - their coop door is opened by 6am every morning and they come and go as they please. Our chickens are loved and treated with the care and respect that all living creatures deserve.

Nutritional InfoIn Spain, during my military service, I learned that Europeans use duck eggs in their baking, and it does make a difference. Because the whites of duck eggs have more protein than those of chicken eggs, they will whip up higher when beaten and create more loft (a better crumb) in cakes . This means lighter, higher cakes. Since the yolks are so rich, your cakes may also be richer with duck eggs. Solution: leave out the yolks if you don't need the extra fat (generally you use twice the egg white if not cooking with yolks). When adjusting for duck eggs: a large chicken egg is 2oz with shell & 1.75oz without shell [see Nutritional Info for adjustmants]. My duck eggs will have a clear albumin and bright yellow yolk that stands up above the egg white.
Menagerie Acres holds the Candler's License Numbers 5059 & 5060. Date of lay is marked on the top of each egg and I only sell cleanly laid eggs (in a straw nest versus on the open ground or mud nest) to my customers. CAUTION: The risk of getting a foodborne illness from eggs is very low. However, the nutrients that make eggs a high-quality food for humans are also a good growth medium for bacteria. In addition to food, bacteria also need moisture, a favorable temperature and time in order to multiply and increase the risk of illness. In the rare event that an egg contains bacteria, you can reduce the risk by proper chilling and eliminate it by proper cooking. When you handle eggs with care, they pose no greater food-safety risk than any other perishable food.

Our layers live on the pasture 24x7x365 and produce beautiful eggs with orange color yolks. Our girls lay predominantly brown eggs, but you might be lucky to find the occasional green or blue egg from an Araucana - don't worry, other than the color of the shell they are no different from the brown-shelled eggs.
Our hens are fed unmedicated, locally produced feed. The best part (and what makes the yolk so orange) is that 20-30% of their diet comes directly from foraging on the pasture - bugs, worms, and grass.
The birds are completely unconfined...we find them all over the farm. If you had to be a laying hen, you'd want to be laying at Greendale Farm.

Delicious orange-yolked, brown and cream shelled eggs. The yolks hold together well. You'll notice that the yolk stands up about a 1/4 inch when you crack it into the pan and the white stays generally right around the yolk instead of spreading out everywhere in the pan, which shows its quality. The eggs are excellent for baking, make excellent quiches and frittatas -- you can stir them into a Chinese stir fry or have delicious boiled eggs with salt as a snack. Yum. We have 15 Buff Orpington and Barred Rock chickens, and two great pyrenees dogs that protect them from predators. Because of that protection, our chickens are free to roam and scratch and feed outside in the grass all day long. They get their fill of fresh vegetable scraps, and their favorite activity is to follow me around the yard while I crack fallen pecans for them with a hammer. And of course, their diet is supplemented with grain feed. Hope you enjoy their eggs. :)

Curious about duck eggs? On a budget? Living alone? Try them by the "each!" Delicious and nutritious Grade A Extra Large or Jumbo pastured duck egg. Each egg has a deep orange-yellow yolk and thick, firm, glossy white. Use them in any recipe where you would use a chicken egg. Especially good for anything requiring whipped whites or for baking to provide an exceptional product. If you or anyone in your family is allergic to chicken eggs, you can substitute our duck eggs (check with your physician). Our Khaki Campbell hens are lovingly tended in our pasture. Their all certified organic grain diet is supplemented with mineral rich sea salt, oyster shells, and kelp. They receive no antibiotics. From sun up to sun down they graze in our pasture on bugs, plants and frog eggs and swim in their own pond or wading pools. They are always together and provide endless entertainment with their amusing antics. The hens are looked after by their handsome drake and our Great Pyrenees Livestock Guardian dog, Belle. We chose these breeds for their hardiness to lay through winter and ability to free range and supplement their grains with insects and grass. Broad River Pastures is dedicated to saving heritage breeds to protect the diversity of our food.
The egg shells are a light pinkish brown and the yolks are a bright orange. These are nutrient dense due to an exceptional all organic soy-free diet supplemented with kelp and probiotics and foraging on pasture for greens and insects. We do not feed antibiotics.
The chickens are safely cooped from dusk to dawn but spend their daylight hours on 1 1/2 acres of pasture they share with ducks and goats. Belle, our Great Pyrenees and Cody, our English Shepherd, watch over them and guard against predators such as coyotes, fox, raccoons, and hawks.
Extra large eggs weigh 2 1/4 ounces or more.
